A fresh and vibrant salad combining tender chicken, sweet mango, creamy avocado, and crunchy cashews for a delicious and healthy meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1 pieces ripe mango
  • 1 pieces ripe avocado

Salad greens

  • 4 cups mixed salad greens
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup cilantro leaves, chopped

Nuts and Seeds

  • 0.25 cup roasted cashews, chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 0.5 teaspoon Dijon mustard
  • to taste Salt and pepper

Instructions 

  • Season chicken with salt and pepper, then grill or pan-fry until cooked through. Cool and slice into strips.
  • Peel mango and cut into small cubes. Halve and slice avocado.
  • Combine greens, chicken, mango, avocado, red onion, and cilantro in a large bowl. Toss gently.
  • Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Drizzle over salad and toss.
  • Transfer to plates and sprinkle with chopped cashews. Serve immediately.

Notes

For extra flavor, marinate the chicken briefly before cooking.
