Instructions
Season chicken with salt and pepper, then grill or pan-fry until cooked through. Cool and slice into strips.
Peel mango and cut into small cubes. Halve and slice avocado.
Combine greens, chicken, mango, avocado, red onion, and cilantro in a large bowl. Toss gently.
Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Drizzle over salad and toss.
Transfer to plates and sprinkle with chopped cashews. Serve immediately.
