Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breast (cut into bite-sized pieces)

Vegetables

  • 2 medium zucchinis (chopped)

Other ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.25 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions 

  • Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning; cook for 5-6 minutes until no longer pink.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in chopped zucchini and red pepper flakes; cook for 5-7 minutes until zucchini is tender but crisp.
  • Remove from heat, sprinkle with Parmesan cheese and parsley. Serve immediately.

Notes

For extra flavor, add a squeeze of lemon before serving.
