A flavorful and healthy bowl combining tender chicken, colorful vegetables, and brown rice, all coated in a savory-sweet sauce.

Ingredients

Cooked Brown Rice

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced into half-moons
  • 1 cup broccoli florets
  • 2 cloves garlic (minced)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt

Optional toppings

  • sesame seeds, green onions, avocado slices, sriracha (for garnish)

Instructions 

  • Toss chicken with smoked paprika, black pepper, and salt.
  • Heat olive oil in a skillet, cook chicken for 5-7 minutes until golden and cooked through. Remove and set aside.
  • In the same skillet, sauté garlic for 30 seconds, then add bell peppers, zucchini, and broccoli. Cook for 5-7 minutes until tender-crisp.
  • Mix soy sauce and honey, pour over vegetables, add chicken, and stir for 1-2 minutes to coat everything in sauce.
  • Divide cooked brown rice into bowls, top with chicken and vegetables, and add optional toppings as desired.

Feel free to customize with your favorite toppings or additional vegetables.
