A flavorful and healthy bowl combining tender chicken, colorful vegetables, and brown rice, all coated in a savory-sweet sauce.
Ingredients
Cooked Brown Rice

boneless, skinless chicken breast
(cut into bite-sized pieces)

olive oil

red bell pepper
sliced
1
yellow bell pepper
sliced
1
zucchini
sliced into half-moons
1
cup
broccoli florets

cloves
garlic

low-sodium soy sauce

tablespoon
honey or maple syrup

smoked paprika

ground black pepper

Optional toppings
sesame seeds, green onions, avocado slices, sriracha

Instructions
Toss chicken with smoked paprika, black pepper, and salt.
Heat olive oil in a skillet, cook chicken for 5-7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, sauté garlic for 30 seconds, then add bell peppers, zucchini, and broccoli. Cook for 5-7 minutes until tender-crisp.
Mix soy sauce and honey, pour over vegetables, add chicken, and stir for 1-2 minutes to coat everything in sauce.
Divide cooked brown rice into bowls, top with chicken and vegetables, and add optional toppings as desired.
