A comforting and hearty chicken and rice soup that's perfect for chilly days.

Ingredients

Base Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, diced ((about 1 cup))
  • 2 large carrots, diced ((about 1 cup))
  • 2 ribs celery, diced ((about 1 cup))
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried italian seasoning
  • 1 teaspoon kosher salt
  • ΒΌ teaspoon black pepper
  • β…› teaspoon red pepper flakes, optional
  • 6 cups chicken broth
  • 1 cup long-grain white rice, uncooked
  • 2 cups shredded rotisserie chicken
  • to taste fresh parsley, chopped, for garnish

Instructions 

  • Heat olive oil and butter in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook until softened, about 8–10 minutes.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Add spices, then pour in chicken broth and bring to a boil.
  • Reduce heat, stir in rice, and simmer for 15–18 minutes.
  • Add chicken, simmer until heated through, and serve garnished with parsley.

Notes

For extra flavor, use homemade chicken broth if available.
