Ingredients

Dumpling Dough

  • 1 cup Baker’s Corner All-Purpose Flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon Stonemill Pumpkin Pie Spice
  • 0.25 cup cold Countryside Creamery Pure Irish Butter, grated

Soup Base

  • 2 tablespoons Countryside Creamery Pure Irish Butter
  • 2 large carrots, peeled & diced
  • 1 stalk celery, diced
  • 1 large yellow onion, diced
  • 3 tablespoons Baker’s Corner All-Purpose Flour
  • 32 ounces Simply Nature Organic Chicken Broth
  • 1 cup Baker’s Corner 100% Pure Pumpkin
  • 0.5 teaspoon Stonemill Ground Cumin
  • 0.5 teaspoon Stonemill Pumpkin Pie Spice
  • 1 head garlic, halved crosswise & excess paper removed
  • 1.5 pounds Simply Nature Organic Chicken Breasts
  • 1 10-ounce bag frozen Simply Nature Organic Butternut Squash or Sweet Potatoes
  • 0.5 cup Simply Nature Organic Whole Milk

Dumplings (below)

  • 0.25 lemon juice from 1/2 lemon
  • to taste kosher salt & ground black pepper (for seasoning)
  • 4 tablespoons cold Countryside Creamery Pure Irish Butter, grated
  • 1 cup Baker’s Corner All-Purpose Flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon Stonemill Pumpkin Pie Spice
  • 1 large egg, lightly whisked
  • 1/3 cup Baker’s Corner 100% Pure Pumpkin
  • 0.25 cup Simply Nature Organic Whole Milk

Instructions 

  • Melt butter in a Dutch oven, cook vegetables with seasoning until softened.
  • Sprinkle flour, cook until browned, then add broth, garlic, pumpkin, cumin, and spice. Simmer and add shredded chicken and squash.
  • Prepare dumpling dough by mixing dry ingredients, then add grated butter. Whisk wet ingredients and combine with dry to form dough.
  • Shred cooked chicken, return to pot, add milk, and bring to simmer. Drop spoonfuls of dough into the soup and cook until puffy, about 8-10 minutes.
  • Finish with lemon juice, season to taste, and serve immediately.

Notes

For best results, do not overmix the dumpling dough to keep them light and fluffy.
