Instructions
Dice onion, celery, jalapeño, and mince garlic. Cook with olive oil until soft, about 5 minutes.
Add chicken, broth, tomatoes, oregano, and cumin. Bring to a boil, then simmer for 45 minutes.
Remove chicken, shred with forks, return to pot, and squeeze in lime juice.
Chop cilantro and stir into the soup. Slice avocado and serve with each bowl.
Notes
For extra flavor, add a squeeze of lime or a sprinkle of cilantro before serving.
