A flavorful and hearty chicken soup with fresh lime and cilantro, perfect for a comforting meal.

Ingredients

Vegetables

  • 1 piece yellow onion
  • 3 ribs celery (about 1/4 bunch)
  • 1 piece jalapeño
  • 4 cloves garlic
  • 2 Tbsp olive oil

Protein

  • 1 about 3/4 lb. boneless, skinless chicken breast

Broth & Canned Goods

  • 6 cups chicken broth
  • 2 10oz. cans diced tomatoes with green chiles (Rotel)
  • 1 tsp oregano
  • 1/2 Tbsp cumin
  • 1 piece lime
  • 1/2 bunch cilantro
  • 1 piece avocado

Instructions 

  • Dice onion, celery, jalapeño, and mince garlic. Cook with olive oil until soft, about 5 minutes.
  • Add chicken, broth, tomatoes, oregano, and cumin. Bring to a boil, then simmer for 45 minutes.
  • Remove chicken, shred with forks, return to pot, and squeeze in lime juice.
  • Chop cilantro and stir into the soup. Slice avocado and serve with each bowl.

Notes

For extra flavor, add a squeeze of lime or a sprinkle of cilantro before serving.
