Ingredients

Base Ingredients

  • 2 tablespoons butter
  • 1 large yellow onion (diced)
  • 3 stalks celery (sliced)
  • 1/2 cup matchstick carrots
  • 2 cloves garlic (minced)
  • 3 cups cooked and shredded chicken (use a rotisserie chicken for ease)
  • 8 oz evaporated milk (or half and half)
  • 1 can cream of chicken soup ((10.5 oz))
  • 40 oz chicken broth
  • salt and freshly cracked black pepper (to taste)
  • 1 can buttermilk biscuits ((16.3 oz))
  • 1/4 cup all-purpose flour

Instructions 

  • Melt butter in a pot over medium-high heat. Add onion, celery, carrots, and garlic; cook until tender, about 6-8 minutes.
  • Add chicken, broth, evaporated milk, and cream of chicken; bring to a simmer. Season with salt and pepper.
  • Cut biscuits into quarters and toss in flour.
  • Add biscuits to soup, press under broth, cover, and cook for 8-10 minutes.
  • Test biscuits for doneness; serve immediately once cooked through.

Notes

For extra biscuits, add a 5 oz can of biscuits.
