Ingredients

Pasta and Broccoli

  • 3 cups dry pasta (penne, rigatoni, or cavatappi)
  • 2 cups fresh broccoli florets

Chicken

  • 2 large chicken breasts, cut into bite-sized pieces

Cheese and Sauce

  • 2 tbsp olive oil
  • Salt and black pepper, to taste Salt and black pepper (to taste)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk (whole or 2%)
  • 1 ½ cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp dried thyme or Italian seasoning

Fresh parsley, chopped (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Cook pasta and broccoli, then drain.
  • Sauté chicken in olive oil until cooked. Prepare cheese sauce with butter, garlic, flour, and milk, then stir in cheeses and seasonings.
  • Combine cooked pasta, broccoli, chicken, and cheese sauce. Transfer to baking dish, top with remaining mozzarella, and bake for 20-25 minutes.
  • Let rest for 5 minutes, garnish with parsley if desired, and serve.

Notes

For a lighter version, use low-fat cheese and milk.
