A delicious and healthy dish featuring roasted eggplants filled with shredded chicken, tomatoes, and melted cheese, perfect for a satisfying meal.

Ingredients

Vegetables

  • 2 medium eggplants (sliced in half lengthwise)
  • 3 cloves garlic (thinly sliced)
  • 2-3 tablespoons extra virgin olive oil
  • to taste salt and pepper
  • 8 ounces cooked chicken breast (shredded)
  • 0.5 cup diced tomatoes
  • 4 ounces grated cheddar cheese
  • for garnish parsley or green onions (chopped)

Instructions 

  • Preheat oven to 400°F (200°C). Score eggplants diagonally, rub with garlic, and insert slices into slits.
  • Drizzle with olive oil, season with salt and pepper, then roast for 20 minutes.
  • Top eggplants with chicken, tomatoes, and cheese, then bake for another 5 minutes until cheese melts.
  • Remove from oven, garnish with parsley or green onions, and serve.

Notes

For extra flavor, add herbs or spices as desired.
