A delicious and healthy dish featuring roasted eggplants filled with shredded chicken, tomatoes, and melted cheese, perfect for a satisfying meal.

Instructions
Preheat oven to 400°F (200°C). Score eggplants diagonally, rub with garlic, and insert slices into slits.
Drizzle with olive oil, season with salt and pepper, then roast for 20 minutes.
Top eggplants with chicken, tomatoes, and cheese, then bake for another 5 minutes until cheese melts.
Remove from oven, garnish with parsley or green onions, and serve.
