Ingredients

Protein

  • 2 pounds boneless, skinless chicken breasts (sliced into strips)
  • 1 red bell pepper seeded and sliced
  • 1 jalapeño pepper seeded and sliced
  • 1 orange sliced in half (orange slices)
  • to taste lime wedges for garnish (optional)
  • to taste green onions sliced, for garnish (optional)
  • to taste fresh parsley minced, for garnish (optional)
  • 1/3 cup honey
  • 1/3 cup orange juice (fresh preferred)
  • 2 tablespoons brown sugar
  • 3 tablespoons coarse dijon mustard
  • 1 tablespoon yellow mustard
  • 3/4 tablespoon Cajun seasoning
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions 

  • Marinate chicken strips in a mixture of honey, orange juice, sugars, mustards, Cajun seasoning, garlic, salt, and pepper for up to 8 hours.
  • Cook the marinated chicken in a skillet over medium-high heat until cooked through and glazed, about 25-30 minutes.
  • Add sliced bell pepper, jalapeño, and orange slices in the last 5 minutes to cook in the glaze.
  • Remove from heat and serve over rice, quinoa, or as a low-carb option, garnished with green onions, parsley, and lime wedges if desired.

Notes

For best flavor, marinate the chicken overnight and adjust spice levels to taste.
