A flavorful dish combining spicy Cajun chicken with fragrant coriander and lime rice, topped with fresh avocado and charred peppers and onion.

Dried Long Grain Rice
150gdried long grain rice
Cajun Seasoning
1.5tbspCajun seasoning
Chicken Breasts
2piecesskinless chicken breasts
Olive Oil
1.5tbspolive oil
Red Bell Pepper
0.5red bell pepperred bell pepper deseeded and sliced
Yellow Bell Pepper
0.5yellow bell pepperyellow bell pepper deseeded and sliced
Green Bell Pepper
0.5green bell peppergreen bell pepper deseeded and sliced
Brown Onion
1smallsmall brown onion peeled and sliced
Cilantro
1small bunchsmall bunch coriander cilantro
Lime Zest
1limezest of 1 lime
Avocado
1smallpeeled, de-stoned and chopped avocado
Instructions
Boil water, add rice and simmer for 15 minutes until tender. Drain and fluff with a fork, then stir in coriander and lime zest.
Heat a cast iron griddle, brush with oil, season chicken with Cajun seasoning and rub with half the oil. Cook for 7-10 minutes until charred and cooked through. Rest the chicken.
Brush the griddle with remaining oil, then cook peppers and onion for 5-6 minutes until lightly charred.
Slice the rested chicken, divide rice into bowls, top with chicken, charred vegetables, and chopped avocado.
Notes
For extra flavor, marinate the chicken in Cajun seasoning and a little oil for 30 minutes before cooking.
