Instructions
Heat olive oil in a skillet over medium heat.
Season chicken breasts with Cajun seasoning and cook for 6-7 minutes per side until golden.
Remove chicken and let rest; in the same skillet, sauté onions and bell peppers for 5-7 minutes.
Add minced garlic and cook for 1 minute.
Slice the chicken and combine with vegetables, heat through for 1-2 minutes, then garnish with parsley.
