  • 1 tablespoon oil (For searing chicken.)
  • 1 lemon lemon juice (Optional for marinating chicken.)
  • 1 cup long-grain white rice (Can substitute with jasmine or basmati.)
  • 2 cups chicken stock (Adds flavor; can substitute with water.)
  • 3 cloves garlic (Minced.)
  • 1 medium onion (Chopped.)
  • 1 medium bell pepper (Chopped.)
  • 2 stalks celery (Chopped.)
  • 4 ounces light cream cheese (For a lighter creamy finish.)
  • 1/4 cup Parmesan cheese (Grated for flavor.)

Instructions 

  • Season the chicken with Cajun spices and sear in oil until cooked through.
  • Cook rice in chicken stock until tender.
  • Sauté garlic, onion, bell pepper, and celery until softened.
  • Mix cooked vegetables with cream cheese and Parmesan, then combine with sliced chicken and rice.
