  • 3 pieces chicken breasts (cut into small strips)
  • 1-3 tbsp Cajun seasoning (if spicy, add ½ tbsp)
  • 1 tsp salt

  • 1 tbsp olive oil
  • ½ tbsp butter

Vegetables

  • 1 large onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste (tomato purée)

Grains & Pasta

  • 1 cup orzo pasta

Broth & Stock

  • 1 cup chicken broth (or stock made with a stock cube)

Greens & Dairy

  • 1 cup shredded spinach
  • ¼ cup heavy cream (double cream)
  • 3 tbsp grated parmesan cheese (plus extra to serve)
