This creamy Cajun Chicken Alfredo combines bold spices with rich cheese for a restaurant-quality meal that's easy to prepare at home.

Ingredients

Protein

  • 1.5 pounds boneless skinless chicken breasts
  • 1 tablespoon Cajun seasoning ((or to taste, (use our homemade salt-free Cajun seasoning recipe or store-bought)))
  • 1.5 teaspoons kosher salt ((or to taste, (reduce or omit if using store-bought Cajun seasoning with added salt)))

Dairy & Pasta

  • 2 tablespoons unsalted butter
  • 16 ounces fettuccine ((can sub linguine or your pasta of choice))
  • 8 cloves fresh garlic ((minced))
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 3 cups parmesan cheese ((freshly grated, 12 ounces))
  • 0.5 tablespoon Cajun seasoning ((or to taste, (use our homemade salt-free Cajun seasoning recipe or store-bought)))
  • 0.25 teaspoon kosher salt ((or to taste, (reduce or omit if using store-bought Cajun seasoning with added salt)))
  • 1 cup reserved pasta water

Fresh herbs

  • a handful fresh parsley ((minced, plus more for garnish))

Instructions 

  • Season chicken with Cajun seasoning and salt, then cook until browned. Remove and set aside.
  • In the same pan, melt butter and sauté minced garlic until fragrant.
  • Add chicken broth and heavy cream, bring to a simmer, then stir in Parmesan cheese until melted and smooth.
  • Cook pasta according to package instructions, reserving pasta water. Toss pasta into the sauce, adding reserved water to loosen if needed. Mix in cooked chicken and parsley.
  • Garnish with additional parsley and serve hot.

Notes

For a milder flavor, reduce Cajun seasoning. Use fresh Parmesan for best taste.
