Ingredients

Meat

  • 1 lb ground chicken
  • 0.25 cup canola oil
  • 1 large white onion, finely chopped
  • 0.25 cup garlic, finely chopped
  • 0.25 cup fresh ginger, finely chopped
  • 2 cups puréed tomatoes
  • 2 tablespoons chana or garam masala
  • 2 tablespoons chaat masala
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cardamom
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 2 tablespoons butter
  • 0.5 cup cream (35% fat)
  • 2 tablespoons Kasoori methi (dried fenugreek leaves)
  • to taste salt and pepper

Garnish

  • as needed chopped cilantro
  • as needed raita (for garnish)

Instructions 

  • Brown the ground chicken in a skillet, then drain and set aside.
  • Cook onions in oil until soft, then add garlic and ginger; cook for 5 minutes.
  • Add tomatoes and spices, simmer for 45 minutes, then blend the sauce until smooth.
  • Stir in butter, cream, cooked chicken, and Kasoori methi; simmer for 5 minutes. Season with salt and pepper.
  • Serve over rice, garnished with cilantro and raita.

Notes

Adjust spice levels to taste and serve immediately for best flavor.
