A rich and creamy Indian-inspired dish featuring tender chicken in a flavorful tomato and spice sauce, perfect served over rice.

Ingredients

Protein

  • 1.5 pounds boneless skinless chicken thighs
  • 0.5 cup full-fat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 4 cloves garlic (minced)
  • 4 teaspoons minced ginger
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 2 tablespoons extra-virgin olive oil or avocado oil
  • 1 medium yellow onion (diced)
  • 0.5 cup raw cashews
  • 1 tablespoon coconut sugar (or other sweetener)
  • 1 15-ounce can crushed tomatoes
  • 1 cup water
  • 2 tablespoons unsalted butter (or ghee)
  • 0.5 cup heavy cream (or coconut cream)

Instructions 

  • Cut chicken into 1-inch pieces, marinate with yogurt, lemon juice, ginger, garlic, spices, then refrigerate for 1 hour.
  • Cook marinated chicken in oil until opaque, then set aside.
  • Sauté onions, add spices, cashews, tomatoes, sugar, and water; simmer for 5 minutes.
  • Blend sauce until smooth, then stir in butter and cream.
  • Return chicken to pan, cook for 3-5 minutes, then serve over rice topped with cilantro.

Notes

For extra flavor, let the chicken marinate overnight.
