Delicious mini sandwiches featuring spicy buffalo chicken, melted cheese, and fresh toppings, perfect for a quick and flavorful meal.

Ingredients

Bread and Rolls

  • 2 cups shredded boneless skinless chicken breast
  • 3/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 2 tablespoons thinly sliced green onion
  • 12 count Hawaiian sweet rolls
  • 1 tablespoon melted butter
  • 12 slices pepper jack cheese
  • 1-2 count roma tomatoes, thinly sliced
  • 1-2 cups shredded romaine
  • melted butter or olive oil for serving
  • chives for serving

Instructions 

  • Slice the rolls in half lengthwise and toast under broiler until golden. Remove and brush tops with melted butter. Broil briefly again.
  • Mix shredded chicken, buffalo sauce, and ranch dressing in a bowl.
  • Layer cheese, chicken mixture, and cheese on bottom rolls. Bake at 350°F for 15-20 minutes until cheese melts.
  • Top with sliced tomato, romaine, and the top roll. Brush with butter or oil and garnish with chives. Serve.

Notes

For extra flavor, toast the rolls well and serve immediately.
