A flavorful and protein-packed bowl combining spicy buffalo chicken with fresh vegetables and rice for a satisfying meal.

Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/2 cup hot sauce (Frank's RedHot)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Base

  • 2 cups cooked rice

Toppings & Greens

  • 1 cup shredded lettuce or mixed greens
  • 1/2 cup dairy-free ranch dressing or standard ranch
  • 1/4 cup shredded cheddar or dairy-free cheese
  • 1/2 cup sliced cucumber or red bell peppers

Instructions 

  • Preheat oven to 375°F (190°C). Season chicken with salt and pepper, toss with olive oil, and roast 8-10 minutes until golden.
  • While chicken cooks, melt butter in a skillet, add hot sauce, and simmer 2 minutes to thicken.
  • Toss roasted chicken in buffalo sauce until coated.
  • Assemble bowls with rice, buffalo chicken, greens, vegetables, cheese, and drizzle with ranch.

Notes

For extra flavor, let the chicken marinate in buffalo sauce before roasting.
