A spicy and cheesy baked casserole combining tender chicken, rice, and buffalo sauce for a flavorful meal.

Ingredients

Broth and Sauces

  • 2 cups chicken broth
  • 1/2 cup hot sauce (like Frank's RedHot)
  • 2 tablespoons butter

Spices

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Main ingredients

  • 14 oz chicken breasts (diced, about 2 large chicken breasts)
  • 1 carrot carrot
  • 2 celery rib celery
  • 1 cup long grain white rice
  • 1 1/2 cups mozzarella cheese (150 grams)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Combine broth, hot sauce, butter, and spices; bring to a boil.
  • Spread chicken, vegetables, and rice in a casserole dish; pour broth over.
  • Cover with foil and bake for 45 minutes.
  • Remove foil, add cheese, and bake or broil until melted and bubbly.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
