Ingredients

Sauce

  • 3 tablespoons creamy peanut butter
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon reduced-sodium soy sauce
  • 2 teaspoons light brown sugar
  • 2 teaspoons sambal oelek ground fresh chile paste

Grains

  • 1 cup farro
  • 1/4 cup chicken stock

Protein

  • 1 pound boneless skinless chicken breasts, cut into bite-sized chunks
  • 1 tablespoon cornstarch
  • 1 tablespoon fish sauce

Vegetables

  • 2 cups shredded kale
  • 1.5 cups shredded purple cabbage
  • 2 carrots peeled and grated
  • 1/2 cup fresh cilantro
  • 1/4 cup roasted peanuts

Instructions 

  • Whisk together peanut butter, lime juice, soy sauce, brown sugar, and sambal oelek; add water to thin. Divide sauce into containers and refrigerate.
  • Cook farro according to package, then cool.
  • Mix chicken with cornstarch and fish sauce; cook in skillet with olive oil until golden. Add garlic, shallot, ginger, then stir in chicken stock mixture and cook until slightly thickened. Season with salt and pepper.
  • Assemble bowls: divide farro, chicken, kale, cabbage, carrots, cilantro, and peanuts evenly. Serve with peanut sauce.
