Boursin Chicken Orzo

A creamy and flavorful dish combining tender chicken, orzo pasta, and Boursin cheese for a comforting meal.

Ingredients

Main

  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 1.5 lbs Boneless, Skinless Chicken Breast, cut into 1-inch cubes
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 small Yellow Onion, finely diced
  • 4 cloves Garlic, minced
  • 1.5 cups Orzo Pasta, uncooked
  • 4 cups Low-Sodium Chicken Broth
  • 5.2 oz Boursin Cheese, Garlic & Fine Herbs flavor, softened
  • 3 cups Fresh Spinach, packed
  • 2 tbsp Fresh Parsley, chopped, for garnish (optional)

Instructions 

  • Season chicken with salt and pepper. Cook in a skillet with oil and butter until golden and cooked through. Remove and set aside.
  • Sauté diced onion in the same skillet until softened, then add garlic and toast for 1 minute.
  • Add orzo and cook, stirring, for 1 minute. Pour in broth, bring to a simmer, cover, and cook for 10-12 minutes until orzo is al dente.
  • Turn off heat, add Boursin cheese and stir until melted into a creamy sauce. Return chicken and spinach, stir until spinach wilts. Serve garnished with parsley.

Notes

For a lighter version, use less cheese or chicken broth.
