Instructions
Slice chicken horizontally into 4 thin cutlets and season with salt, garlic powder, and black pepper. Refrigerate for 1 hour.
Heat olive oil in a skillet over medium heat. Sear chicken 2-3 minutes per side until cooked through. Remove and set aside.
Carefully add bourbon to the skillet, simmer 1-2 minutes to cook off alcohol, scraping browned bits.
Whisk in maple syrup, Dijon, balsamic, thyme, salt, and pepper. Simmer 2-3 minutes until thickened. Return chicken to skillet, coat with glaze, and warm through.
Serve chicken with extra glaze and thyme sprigs if desired.

Let the glazed chicken rest for a few minutes before serving for best flavor.
