A flavorful and easy-to-make bourbon chicken dish with a rich sauce, perfect served over rice and garnished with spring onions and sesame seeds.

light soy sauce
(use low sodium if preferred)

dark soy sauce
(use low sodium if preferred)

cornflour
(cornstarch in USA)

chicken stock
(use low sodium if preferred)

bourbon whisky
(replace with apple juice + Worcestershire sauce if preferred)

Instructions
Mix soy sauces and cornflour to make the sauce. Add chicken stock, bourbon, and sugar; set aside.
Toss chicken with cornflour, salt, and pepper. Heat oil in a pan and cook chicken until golden, about 8-12 minutes.
Add garlic and ginger; cook for 30 seconds. Pour in sauce, cook 2-3 minutes until thickened and coated.
Remove chicken, slice if desired, then return to sauce and stir to coat. Serve over rice, garnished with spring onions and sesame seeds.
Notes
For a lower alcohol version, replace bourbon with apple juice and Worcestershire sauce.
