Bourbon Chicken Recipe

A flavorful and easy-to-make bourbon chicken dish with a rich sauce, perfect served over rice and garnished with spring onions and sesame seeds.

Ingredients

Main

  • 750 g skinless, boneless chicken thigh fillets (trimmed)
  • 2 tbsp cornflour (cornstarch in USA)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp oil
  • 3 cloves garlic (peeled and minced)
  • 1 tsp minced ginger
  • 3 tbsp light soy sauce (use low sodium if preferred)
  • 2 tbsp dark soy sauce (use low sodium if preferred)
  • 1 tbsp cornflour (cornstarch in USA)
  • 180 ml chicken stock (use low sodium if preferred)
  • 4 tbsp bourbon whisky (replace with apple juice + Worcestershire sauce if preferred)
  • 5 tbsp light brown sugar

Optional

  • boiled rice or egg fried rice served with rice
  • spring onions scallions, thinly sliced
  • sesame seeds for garnish

Instructions 

  • Mix soy sauces and cornflour to make the sauce. Add chicken stock, bourbon, and sugar; set aside.
  • Toss chicken with cornflour, salt, and pepper. Heat oil in a pan and cook chicken until golden, about 8-12 minutes.
  • Add garlic and ginger; cook for 30 seconds. Pour in sauce, cook 2-3 minutes until thickened and coated.
  • Remove chicken, slice if desired, then return to sauce and stir to coat. Serve over rice, garnished with spring onions and sesame seeds.

Notes

For a lower alcohol version, replace bourbon with apple juice and Worcestershire sauce.
