A delicious and easy flatbread topped with seasoned chicken, sautéed spinach, and melted cheeses, perfect for a quick meal or snack.

Ingredients

Flatbreads

  • 2 pcs flatbread (Stonefire Naan preferred)
  • 3 pieces chicken breasts (cut into 1-inch cubes for even cooking)
  • 8 oz mozzarella cheese (freshly shredded for better melting)
  • 0.25 cup parmesan cheese (freshly grated)
  • 1.5 tbsp olive oil (Extra Virgin)
  • 1 pkg spinach (approx. 9-10 oz)
  • 1 piece onion (diced into 1/4-inch pieces)
  • 5 cloves garlic (minced)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh parsley (chopped)

Instructions 

  • Preheat oven to 400°F. Prepare ingredients: cube chicken, dice onion, mince garlic, shred cheese, chop parsley.
  • Cook onion and garlic in olive oil until softened, then add spinach and seasonings; cook until wilted. Set aside.
  • In the same skillet, cook chicken until golden and cooked through. Remove from heat.
  • Warm flatbreads in oven for 3 minutes. Spread spinach mixture on each, top with chicken and cheeses, then bake until cheese melts and bubbles, about 5-6 minutes.
  • Let cool slightly, garnish with parsley, and serve immediately.

Notes

For extra flavor, brush flatbreads with water before baking to keep them tender.
