A delicious and easy flatbread topped with seasoned chicken, sautéed spinach, and melted cheeses, perfect for a quick meal or snack.
Ingredients
Flatbreads
2pcsflatbread (Stonefire Naan preferred)
3pieceschicken breasts(cut into 1-inch cubes for even cooking)
8ozmozzarella cheese(freshly shredded for better melting)
0.25cupparmesan cheese(freshly grated)
1.5tbspolive oil(Extra Virgin)
1pkgspinach(approx. 9-10 oz)
1pieceonion(diced into 1/4-inch pieces)
5clovesgarlic(minced)
0.5tspsalt
0.5tspblack pepper
0.25tspred pepper flakes
2tbspfresh parsley(chopped)
Instructions
Preheat oven to 400°F. Prepare ingredients: cube chicken, dice onion, mince garlic, shred cheese, chop parsley.
Cook onion and garlic in olive oil until softened, then add spinach and seasonings; cook until wilted. Set aside.
In the same skillet, cook chicken until golden and cooked through. Remove from heat.
Warm flatbreads in oven for 3 minutes. Spread spinach mixture on each, top with chicken and cheeses, then bake until cheese melts and bubbles, about 5-6 minutes.
Let cool slightly, garnish with parsley, and serve immediately.
Notes
For extra flavor, brush flatbreads with water before baking to keep them tender.
