BBQ Chicken Wraps

Delicious grilled chicken wrapped with fresh slaw and smoky BBQ sauce, perfect for a quick and satisfying meal.

Ingredients

Chicken

  • 2 large Chicken Breasts (Take out fridge 10-15 mins before using)
  • 1 cup Good Quality BBQ Sauce (as needed, see notes)
  • 1 heaped tsp teaspoon Smoked Paprika
  • 1 tsp Garlic Powder
  • 0.5 tsp Salt
  • 0.25 tsp Cayenne Pepper
  • 0.25 tsp Black Pepper
  • to taste Olive Oil (Drizzle for coating)
  • 1 large Carrot (Grated on a box grater)
  • 0.25 red cabbage Red Cabbage (Finely sliced)
  • 0.25 green cabbage Green White Cabbage (Finely sliced)
  • 0.5 medium White Onion (Finely sliced, see notes)
  • 4 tbsp Mayo (Full fat)
  • 1 tbsp Sour Cream
  • 2 tsp Dijon Mustard
  • 2 tsp Apple Cider Vinegar
  • 0.5 tsp Sugar (see notes)

Salt and Black Pepper

  • to taste Salt

  • 4 large White Flour Tortilla Wraps
  • 4 small handfuls Spinach or greens of choice

Instructions 

  • Butterfly slice the chicken breasts, then coat with spices and olive oil. Fry over medium-high heat for 3-4 mins per side, then coat with BBQ sauce and rest for 5 mins. Slice at an angle against the grain.
  • Mix mayo, sour cream, mustard, vinegar, and sugar to make coleslaw dressing. Combine with grated carrot, sliced onion, and cabbage to make coleslaw.
  • Lay a wrap, add greens, coleslaw, and sliced chicken. Roll up like a burrito and serve.

Notes

Ensure chicken is cooked through and adjust spice levels to taste.
