A delicious and hearty dish featuring sweet potatoes filled with smoky BBQ chicken, black beans, corn, and topped with cheese and fresh avocado.

Instructions
Preheat oven to 400°F (200°C). Wash, dry, and prick sweet potatoes with a fork.
Bake sweet potatoes for 45-50 minutes until tender. Mix chicken, BBQ sauce, corn, black beans, and red onion.
Make a slit in each sweet potato, stuff with the chicken mixture, top with cheese, and bake for 10 minutes until melted.
Remove from oven, top with diced avocado, and serve.
Notes
For extra flavor, add fresh cilantro or a squeeze of lime.
