Instructions
Preheat oven to 350°F (175°C). Spray a skillet with nonstick spray.
Mix the corn muffin mix, egg, and milk; stir in frozen corn. Pour into skillet.
Combine chicken, chiles, onion, tomato sauce, and BBQ sauce; spoon over batter, leaving edges uncovered.
Bake 25-35 minutes until edges are browned. Top with cheeses and bake 5-10 minutes until melted.
Sprinkle green onions, add optional toppings, and serve.
Notes
For a spicier kick, add more green chiles or hot sauce.
