A hearty and flavorful skillet combining cornbread, BBQ chicken, and melted cheeses, perfect for a comforting meal.

Ingredients

Dry Mix

  • 8.5 ounce Jiffy Corn Muffin Mix
  • 1 egg egg
  • cup milk

Add-ins

  • ½ cup frozen corn
  • 2 ½ cups chopped fully cooked chicken (rotisserie works)
  • 4 ounce diced green chiles, drained
  • ½ cup diced red onion
  • 8 ounce can tomato sauce
  • ½ cup BBQ sauce
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack or pepper Jack cheese
  • ¼ cup thinly sliced green onions

Optional toppings

  • chopped cilantro, Ranch Dressing, sour cream

Instructions 

  • Preheat oven to 350°F (175°C). Spray a skillet with nonstick spray.
  • Mix the corn muffin mix, egg, and milk; stir in frozen corn. Pour into skillet.
  • Combine chicken, chiles, onion, tomato sauce, and BBQ sauce; spoon over batter, leaving edges uncovered.
  • Bake 25-35 minutes until edges are browned. Top with cheeses and bake 5-10 minutes until melted.
  • Sprinkle green onions, add optional toppings, and serve.

Notes

For a spicier kick, add more green chiles or hot sauce.
