Ingredients

Protein

  • 1 lb PERDUE Fresh Boneless Skinless Chicken Breasts
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup BBQ sauce
  • 1/4 oz diced green chilies
  • 1 tbsp unsalted butter
  • 1 box corn muffin mix (prepared according to package)
  • 3/4 cup shredded cheddar cheese
  • 1 tbsp chopped green onion

Instructions 

  • Heat grill to medium-high. Season chicken with olive oil, salt, and pepper. Grill 8-10 mins per side until cooked; rest and shred.
  • Mix shredded chicken with BBQ sauce and green chilies; set aside.
  • Preheat oven to 400°F (200°C). Melt butter in a cast iron skillet over medium-high heat.
  • Pour batter into skillet, bake 5 mins. Top with BBQ chicken and cheese, then bake 10-12 mins until cooked and cheese melts. Broil 2-3 mins for browning.
  • Sprinkle with green onions and serve.

Notes

For extra flavor, let the chicken rest before shredding to retain juices.
