1tbspolive oil
1/4tspsalt
1/8tspblack pepper
3/4cupBBQ sauce
1/4ozdiced green chilies
1tbspunsalted butter
1boxcorn muffin mix(prepared according to package)
3/4cupshredded cheddar cheese
1tbspchopped green onion
Instructions
Heat grill to medium-high. Season chicken with olive oil, salt, and pepper. Grill 8-10 mins per side until cooked; rest and shred.
Mix shredded chicken with BBQ sauce and green chilies; set aside.
Preheat oven to 400°F (200°C). Melt butter in a cast iron skillet over medium-high heat.
Pour batter into skillet, bake 5 mins. Top with BBQ chicken and cheese, then bake 10-12 mins until cooked and cheese melts. Broil 2-3 mins for browning.
Sprinkle with green onions and serve.
