Ingredients

Protein

  • 2 cups cooked shredded chicken
  • 1 2 cup cup BBQ sauce plus more for serving
  • 2 cups cooked white or brown rice
  • Juice zest of 1 lime lime zest
  • 1 4 cup cup fresh cilantro, chopped
  • Salt to taste salt
  • 1 cup corn kernels fresh, frozen, or grilled
  • 1 2 cup cup diced tomato
  • 1 4 cup cup red onion, finely diced
  • 1 tbsp tablespoon lime juice
  • Salt pepper, to taste salt and pepper
  • 1 cup black beans, drained rinsed
  • 1 2 cup cup shredded cheddar cheese

Instructions 

  • Toss shredded chicken with BBQ sauce and warm.
  • Mix cooked rice with lime juice, zest, cilantro, and salt.
  • Combine corn, tomato, onion, lime juice, salt, and pepper to make salsa.
  • Layer rice, BBQ chicken, black beans, corn salsa, and cheddar in bowls.
  • Serve with extra BBQ sauce on the side.

Notes

Store BBQ sauce separately to keep chicken juicy when reheating.
