A flavorful and healthy bowl combining tender chicken tenders, roasted sweet potatoes, and crunchy coleslaw, topped with fresh garnishes.

Chicken
1lbchicken tenders
2Tbspolive oil(divided)
2tspchicken rub
2TbspBBQ sauce
Sweet Potatoes
3smallsweet potatoes(6-7 oz each, peeled and cut into 1-inch cubes)
1Tbspolive oil
2tspsalt
1/4tsppepper
Coleslaw
9ozcoleslaw cabbage mix(no dressing)
0.5cupmayo
1Tbspfresh lemon juice or apple cider vinegar
1.5Tbspsweetener(monkfruit, coconut sugar, or sugar)
Optional Garnishes
to tastepickles, cilantro, avocado, pumpkin seeds(for garnish)
Instructions
Toss sweet potato cubes with olive oil, salt, and pepper. Air fry at 380°F for 15 minutes, flipping halfway, or bake at 400°F for 25-30 minutes until tender.
While sweet potatoes cook, prepare chicken. Brush chicken tenders with olive oil, season with chicken rub, and air fry at 400°F for 4 minutes, then brush with BBQ sauce and cook for another 3-4 minutes until internal temperature reaches 165°F, or bake at 400°F for 10 minutes.
Mix dressing ingredients in a small bowl. Toss coleslaw with dressing in a medium bowl.
Assemble bowls by dividing coleslaw, sweet potatoes, and sliced or whole chicken tenders. Garnish with avocado, cilantro, pumpkin seeds, and pickles as desired.
Notes
For extra flavor, marinate chicken with BBQ sauce before cooking.
