BBQ Chicken Bowl Recipe

A flavorful and healthy bowl combining tender chicken tenders, roasted sweet potatoes, and crunchy coleslaw, topped with fresh garnishes.

Ingredients

Chicken

  • 1 lb chicken tenders
  • 2 Tbsp olive oil (divided)
  • 2 tsp chicken rub
  • 2 Tbsp BBQ sauce

Sweet Potatoes

  • 3 small sweet potatoes (6-7 oz each, peeled and cut into 1-inch cubes)
  • 1 Tbsp olive oil
  • 2 tsp salt
  • 1/4 tsp pepper

Coleslaw

  • 9 oz coleslaw cabbage mix (no dressing)
  • 0.5 cup mayo
  • 1 Tbsp fresh lemon juice or apple cider vinegar
  • 1.5 Tbsp sweetener (monkfruit, coconut sugar, or sugar)

Optional Garnishes

  • to taste pickles, cilantro, avocado, pumpkin seeds (for garnish)

Instructions 

  • Toss sweet potato cubes with olive oil, salt, and pepper. Air fry at 380°F for 15 minutes, flipping halfway, or bake at 400°F for 25-30 minutes until tender.
  • While sweet potatoes cook, prepare chicken. Brush chicken tenders with olive oil, season with chicken rub, and air fry at 400°F for 4 minutes, then brush with BBQ sauce and cook for another 3-4 minutes until internal temperature reaches 165°F, or bake at 400°F for 10 minutes.
  • Mix dressing ingredients in a small bowl. Toss coleslaw with dressing in a medium bowl.
  • Assemble bowls by dividing coleslaw, sweet potatoes, and sliced or whole chicken tenders. Garnish with avocado, cilantro, pumpkin seeds, and pickles as desired.

Notes

For extra flavor, marinate chicken with BBQ sauce before cooking.
