A fresh and flavorful salad combining juicy strawberries, tender chicken, and tangy balsamic dressing for a perfect light meal.

Ingredients

Dressing

  • 0.25 cup extra virgin olive oil
  • 1 tablespoon golden balsamic vinegar
  • 1 teaspoon granulated sugar
  • 1 tablespoon roughly chopped fresh tarragon
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 pieces boneless skinless chicken breasts
  • 6 cups fresh spinach (loosely packed)
  • 6-8 large strawberries (hulled and quartered)
  • 1 piece avocado (peeled, seeded and cut into chunks)
  • 3-4 rings red onion (thinly sliced)
  • 0.25 cup feta cheese
  • 2 tablespoons sliced almonds

Instructions 

  • Whisk olive oil, balsamic vinegar, sugar, tarragon, salt, and pepper until blended.
  • Marinate chicken breasts in half of the dressing for 30 minutes to 2 hours.
  • Grill chicken until cooked through, then rest and slice into 0.25-inch pieces.
  • Combine spinach, strawberries, and red onion in a bowl; toss with remaining dressing.
  • Add avocado, sliced chicken, feta, and almonds; serve immediately.

Notes

For extra flavor, let the chicken marinate longer and serve immediately for best freshness.
