A flavorful and easy-to-make chicken dish featuring cranberries and balsamic vinegar, perfect for a cozy dinner.

Ingredients

Marinade

  • 1/3 cup fresh cranberries or previously frozen and thawed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1/4 cup balsamic vinegar
  • 1 teaspoon minced garlic (about 1 clove)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 1/2 pounds bone in, skin on chicken thighs (4 to 6) (see notes for substitutes)
  • 1/2 cup fresh cranberries or previously frozen and thawed
  • 1 tablespoon maple syrup and balsamic vinegar mixed together to coat chicken during roasting

Optional Toppings

  • fresh thyme leaves, dried herbs or ground black pepper (for garnish)

Instructions 

  • Blend marinade ingredients until smooth, then coat chicken thighs and marinate for 30 minutes or overnight.
  • Preheat oven to 375°F (190°C). Place marinated chicken in baking dish, sprinkle with cranberries, and bake for 25-35 minutes.
  • Turn chicken skin side up, brush with maple syrup and balsamic mixture, then bake or broil until skin is crispy and internal temperature reaches 165°F (74°C).
  • Let chicken rest for 5 minutes, then serve topped with pan sauce, thyme, and black pepper.

Notes

Ensure chicken thighs reach an internal temperature of 165°F for safety.
