Ingredients
Marinade
1/3cupfresh cranberries or previously frozen and thawed
2tablespoonsextra virgin olive oil
2tablespoonsmaple syrup
1/4cupbalsamic vinegar
1teaspoonminced garlic (about 1 clove)
1/4teaspoonkosher salt
1/4teaspoonblack pepper
2 1/2poundsbone in, skin on chicken thighs (4 to 6)(see notes for substitutes)
1/2cupfresh cranberries or previously frozen and thawed
1tablespoonmaple syrup and balsamic vinegar mixed together to coat chicken during roasting
Optional Toppings
fresh thyme leaves, dried herbs or ground black pepper(for garnish)
Instructions
Blend marinade ingredients until smooth, then coat chicken thighs and marinate for 30 minutes or overnight.
Preheat oven to 375°F (190°C). Place marinated chicken in baking dish, sprinkle with cranberries, and bake for 25-35 minutes.
Turn chicken skin side up, brush with maple syrup and balsamic mixture, then bake or broil until skin is crispy and internal temperature reaches 165°F (74°C).
Let chicken rest for 5 minutes, then serve topped with pan sauce, thyme, and black pepper.
Notes
Ensure chicken thighs reach an internal temperature of 165°F for safety.
