Ingredients

Meatball Mixture

  • 1 lb ground turkey (can use ground chicken, beef, lamb, etc.)
  • 1/4 cup parsley (chopped)

Glaze

  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1/4 cup water
  • 3 tbsp fig preserves
  • 4 cloves garlic (minced)
  • 0.5 - 1 tsp red pepper flakes (adjust to desired heat level)
  • 10-15 dried figs dried figs (halved)
  • 1 pint cherry tomatoes
  • 1/4 cup pine nuts (to serve)
  • arugula and hummus arugula and hummus (optional for serving)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix ground turkey, parsley, salt, and pepper; form into meatballs. Bake 20 minutes, then set aside.
  • Simmer balsamic, honey, water, and fig preserves until slightly reduced. Add garlic, pepper flakes, salt, and figs.
  • Add meatballs and tomatoes to skillet; bake 15-20 minutes until cooked through. Top with pine nuts and serve with arugula and hummus if desired.
