Chicken
2largechicken breasts(bisected horizontally to yield 4 fillets)
4ouncescream cheese(softened to room temperature)
3/4cupheavy cream
4clovesgarlic(finely minced)
1/2teaspoononion powder
1/2teaspoonpaprika
1teaspoonItalian seasoning
1/4cupParmesan cheese(freshly grated)
3/4cupmozzarella cheese(finely grated)
8ouncessun-dried tomatoes(well-drained and finely chopped (reserve the oil))
3/4cupfresh spinach(coarsely chopped)

to tasteFreshly ground black pepper
Instructions
Preheat oven to 400°F (204°C).
Slice chicken breasts in half, season with salt, pepper, and half the garlic. Arrange in a baking dish.
Mix cream cheese, heavy cream, remaining garlic, onion powder, paprika, Italian seasoning, Parmesan, and half the mozzarella until smooth. Spread over chicken, drizzle with tomato oil, and scatter sun-dried tomatoes.
Cover with foil and bake for 20 minutes. Uncover, stir in spinach, top with remaining mozzarella, and bake uncovered for 10 more minutes.

Ensure chicken is cooked to an internal temperature of 165°F (74°C).
