Ingredients

Protein

  • 4 pieces chicken thighs or breasts, skinless
  • 0.5 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari (gluten-free option)
  • 3 cloves garlic, freshly minced
  • 2 tablespoons lime juice
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon olive oil
  • 0.5 teaspoon red pepper flakes (optional)
  • Fresh herbs such as cilantro or parsley (for garnish)
  • Toasted sesame seeds (optional)

Instructions 

  • Whisk together sweet chili sauce, soy sauce, minced garlic, lime juice, honey or brown sugar, olive oil, and red pepper flakes to make the marinade.
  • Place chicken in a dish or bag, pour marinade over, cover, and refrigerate for at least 30 minutes.
  • Preheat oven to 400°F (200°C). Arrange chicken on a lined baking sheet.
  • Bake for 20-25 minutes, spooning glaze over chicken occasionally until golden and cooked through.
  • Garnish with fresh herbs and sesame seeds before serving.

Notes

For extra flavor, marinate longer or broil for a few minutes for a caramelized finish.
