Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs or breasts (preferably skin-on)
  • 0.25 cup soy sauce (preferably low-sodium)
  • 0.25 cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon salt

Garnish

  • to taste sesame seeds and chopped green onions (optional garnish)

Instructions 

  • Combine soy sauce, honey, olive oil, vinegar, garlic, ginger, sesame oil, black pepper, and salt in a bowl; whisk until well mixed.
  • Marinate chicken in the mixture for at least 30 minutes, up to overnight in the refrigerator.
  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment or foil, and place a wire rack if available.
  • Remove chicken from marinade, place on prepared baking sheet, and bake for 45-50 minutes until cooked through and skin is crispy. Baste once with leftover marinade if desired.
  • Optional: Increase oven temperature to 400°F (200°C) for last 5-10 minutes to caramelize the glaze.
  • Let the chicken rest for 5 minutes, then garnish with sesame seeds and green onions before serving.

Notes

For best flavor, marinate the chicken overnight. Baste during baking for extra glaze.
