Instructions
Cook quinoa by boiling rinsed grains in water or broth for 15 minutes, then steam for 5 minutes and fluff.
Season chicken with spices, then sear in olive oil until golden and cooked through, about 6-8 minutes.
Blend avocado, Greek yogurt, cilantro, garlic, and lime juice with water until smooth. Season with salt and pepper.
Assemble bowls with quinoa, chicken, beans, tomatoes, corn, onion, and drizzle with avocado lime dressing.
