Instructions
Rinse quinoa, then cook in water or broth for 15 minutes. Fluff and cool.
Dice chicken, toss with spices, and cook in a skillet for 4-6 minutes per side until cooked through. Rest before slicing.
Prepare vegetables: halve tomatoes, slice onion, rinse beans, and chop cilantro.
Blend avocado, Greek yogurt, and cilantro until smooth. Adjust seasoning as desired.
Assemble bowls: layer quinoa, chicken, vegetables, and drizzle with dressing. Serve immediately.
Notes
For extra flavor, add a squeeze of lime or sprinkle additional cilantro before serving.
