Ingredients

Grains

  • 1 cup uncooked quinoa (rinsed thoroughly)
  • 2 cups water or low-sodium chicken broth

Protein

  • 1 lb boneless, skinless chicken breasts (cut into 1-inch cubes)

Vegetables

  • 1 cup cherry tomatoes (halved)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/4 red onion red onion (thinly sliced)
  • 1 can (15 oz) black beans (rinsed and drained)

Dressing

  • 1 large ripe avocado (pitted and peeled)
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup fresh cilantro (loosely packed)

Instructions 

  • Rinse quinoa, then cook in water or broth for 15 minutes. Fluff and cool.
  • Dice chicken, toss with spices, and cook in a skillet for 4-6 minutes per side until cooked through. Rest before slicing.
  • Prepare vegetables: halve tomatoes, slice onion, rinse beans, and chop cilantro.
  • Blend avocado, Greek yogurt, and cilantro until smooth. Adjust seasoning as desired.
  • Assemble bowls: layer quinoa, chicken, vegetables, and drizzle with dressing. Serve immediately.

Notes

For extra flavor, add a squeeze of lime or sprinkle additional cilantro before serving.
