Ingredients

  • 2 tablespoons olive oil ((divided))
  • 1 1/4 pounds boneless skinless chicken breasts
  • Salt and pepper Salt and pepper to taste
  • 2 apples apples ((cored and cut into approximately 1/2 inch thick wedges))
  • 1 cup sliced shallots or onion
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • 1/2 cup low sodium chicken broth
  • 1/2 cup apple cider
  • 1 tablespoon dijon mustard
  • 1/4 cup heavy cream

Instructions 

  • Add 1 tablespoon of oil to a skillet and cook chicken until golden and internal temperature reaches 165°F. Remove and keep warm.
  • Wipe skillet, add remaining oil, and sauté shallots, apples, rosemary, thyme, salt, and pepper until apples are soft, about 7-9 minutes.
  • Pour in broth, cider, and mustard; stir to combine. Simmer, then add cream and stir. Return chicken to skillet and heat through.
  • Simmer for 1-2 minutes, garnish with thyme and rosemary, then serve.

Notes

Use fresh herbs for best flavor and ensure chicken reaches an internal temperature of 165°F.
