Instructions
Add 1 tablespoon of oil to a skillet and cook chicken until golden and internal temperature reaches 165°F. Remove and keep warm.
Wipe skillet, add remaining oil, and sauté shallots, apples, rosemary, thyme, salt, and pepper until apples are soft, about 7-9 minutes.
Pour in broth, cider, and mustard; stir to combine. Simmer, then add cream and stir. Return chicken to skillet and heat through.
Simmer for 1-2 minutes, garnish with thyme and rosemary, then serve.
Notes
Use fresh herbs for best flavor and ensure chicken reaches an internal temperature of 165°F.
