A flavorful and comforting chicken dish simmered in apple cider with warm spices, perfect for a wholesome meal.

Ingredients

Spice Mix

  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1.5 pounds boneless (skinless chicken thighs)
  • 1 tablespoon olive oil or avocado oil
  • 2 tablespoons ghee or butter
  • 1 teaspoon chopped fresh sage
  • 1 teaspoon chopped fresh rosemary
  • 1 tablespoon pure maple syrup (or maple sugar*)
  • 2 medium apples (sliced, unpeeled (I used honey crisp))
  • 1 small yellow onion (diced)
  • to taste generous pinches of sea salt and black pepper
  • 1/2 cup fresh apple cider

Garnish

  • Fresh rosemary (for garnish)

Instructions 

  • Heat a large skillet over medium-high heat. Mix spices and season chicken, then cook for 5 minutes per side until golden.
  • Transfer chicken to a plate. Add ghee, apples, onions, syrup, salt, and pepper to the skillet; cook until apples soften, about 3 minutes.
  • Pour in apple cider and simmer until sauce thickens, about 3-5 minutes. Return chicken to pan, coat with sauce, and heat through for 1 minute.
  • Remove from heat, garnish with fresh rosemary, and serve.

Notes

Store leftovers in a sealed container in the refrigerator for up to 3 days.
