A delicious and healthy air fryer recipe featuring tender chicken topped with a sweet maple walnut glaze, paired with roasted sweet potatoes, Brussels sprouts, and apples.

Ingredients

Vegetables

  • 2 large sweet potatoes (diced)
  • 3 cups brussels sprouts (diced)
  • 2 large apples (diced)

Protein

  • 2 large boneless, skinless chicken breast (about 8 ounces each)
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic salt
  • 1/2 cup walnuts (chopped)

Sauces & Seasonings

  • 4 tablespoons dijon
  • 6 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper (to taste)

Instructions 

  • Preheat air fryer to 370°F. Toss diced sweet potatoes, Brussels sprouts, and apples with olive oil and garlic salt; spread evenly in the basket.
  • Season chicken breasts with salt and pepper; place on top of vegetables. Cook for 12–15 minutes until internal temperature reaches 165°F.
  • Mix walnut ingredients in a small bowl. During last 3–4 minutes, spread walnut mixture over chicken and cook until golden.

Ensure chicken reaches an internal temperature of 165°F for safety.
