A quick and flavorful skillet dish combining spicy buffalo sauce, creamy ranch, and tender chicken served over rice.
Ingredients

buffalo hot sauce

Instructions
Heat a large skillet over medium-high heat. Add 1 tbsp oil and cook chicken until no longer pink, about 6-9 minutes. Remove and keep skillet hot.
Add remaining oil if needed, then sauté onion, carrots, celery, and garlic until softened, about 5-6 minutes.
Stir in rice, then add cooked chicken, buffalo sauce, and ranch dressing. Mix well.
If using cheese, sprinkle on top and broil for 2 minutes. Garnish with cilantro before serving.
Notes
For a lower sodium option, use reduced-sodium ranch and hot sauce.
