A quick and flavorful skillet dish combining spicy buffalo sauce, creamy ranch, and tender chicken served over rice.

Ingredients

Protein

  • 1.5 lbs chicken breast (cut into bite-sized pieces)
  • 2 tbsp avocado oil or olive oil (divided)

Vegetables

  • 1/2 large white or yellow onion (diced)
  • 4 stalks celery (diced)
  • 4 large carrots (peeled and diced)
  • 2 cloves garlic (minced)

Carbohydrates

  • 4 cups pre-cooked white rice
  • 1/4 cup buffalo hot sauce
  • 3/4 cup ranch dressing
  • 2/3 cup grated cheddar cheese (optional)
  • 3 tbsp chopped fresh cilantro

Instructions 

  • Heat a large skillet over medium-high heat. Add 1 tbsp oil and cook chicken until no longer pink, about 6-9 minutes. Remove and keep skillet hot.
  • Add remaining oil if needed, then sauté onion, carrots, celery, and garlic until softened, about 5-6 minutes.
  • Stir in rice, then add cooked chicken, buffalo sauce, and ranch dressing. Mix well.
  • If using cheese, sprinkle on top and broil for 2 minutes. Garnish with cilantro before serving.

Notes

For a lower sodium option, use reduced-sodium ranch and hot sauce.
