A quick and flavorful chicken fried rice recipe that mimics restaurant quality in just 20 minutes.

Ingredients

Rice

  • 1 cup Jasmine or long-grain rice (day-old works best)

Chicken

  • 1 pound Boneless chicken breast, cut into bite-sized pieces

Eggs

  • 3 large large eggs

Vegetables and aromatics

  • to taste Fresh garlic, minced
  • 1 cup White or yellow onions, diced
  • 1 cup Carrots, diced
  • 1/2 cup Green peas

Green onions for garnish

  • 1/4 cup Green onions, sliced

Optional vegetables

  • to taste Bell peppers, bean sprouts, corn (optional)

Sauces and oils

  • 3 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce (for color)
  • 1 teaspoon White pepper
  • to taste salt Salt to taste
  • 2 tablespoons Vegetable or canola oil
  • 1 teaspoon Toasted sesame oil

Instructions 

  • Prepare rice and vegetables; marinate chicken and beat eggs.
  • Scramble eggs in hot wok, then remove and set aside.
  • Cook chicken until golden, then set aside.
  • Add aromatics and vegetables, then stir-fry with rice and cooked ingredients. Add sauces, season, and garnish.

Notes

Use day-old rice for best results and ensure wok is hot for quick stir-frying.
