A quick and flavorful dish combining creamy polenta with spicy chicken and vibrant fajita vegetables, topped with cheese and fresh garnishes.

Ingredients

Polenta and Water

  • 0.5 cup dry polenta
  • 2 cups water
  • 0.25 tsp salt

Vegetables

  • 0.5 white onion white onion, sliced
  • 2 bell peppers bell peppers, sliced

Chicken

  • 2 chicken breasts sliced chicken breasts
  • 1 chipotle in adobo minced chipotle in adobo
  • 1 Tbsp adobo sauce
  • 1 clove garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 jalapeno sliced jalapeno, for garnish

Garnishes

  • chopped cilantro chopped cilantro, for garnish

Instructions 

  • Combine polenta, water, and 1/4 tsp salt in a microwave-safe bowl. Microwave on high for 5 minutes, then let cool.
  • Sauté sliced onion and bell peppers in a skillet over medium-high heat until sizzling, about 3 minutes. Remove and set aside.
  • Add chicken, minced chipotle, and adobo sauce to the skillet. Cook until browned, then add garlic and cooked veggies. Cook for 2 more minutes until chicken is cooked through. Season with salt and pepper.
  • Stir half a cup of cheese into the warm polenta and season with salt and pepper.
  • Assemble bowls with polenta, chicken, veggies, guacamole, and garnishes. Serve immediately.

Notes

You can customize toppings and spice level to taste.
